Come and Get It: Easy Grilled Pork Chops, Macaroni Salad and Peas

Grilled Pork Chops

Grilled pork chops: I rinsed them well, patted them dry, and then marinated them in a mixture of 2 tablespoons McCormick Grill Mates Steak Rub and 4 tablespoons canola oil (which takes the grilling heat well without burning). I let the meat sit in that mixture for at least a half hour. When the grill was hot, the meat took about 4 minutes per side to cook.

You don’t want to overcook your grilled pork chops as they dry out so quickly. You need to cook them just enough to get the pink out. For us, this was about 4 minutes each side. It will depend on the thickness of the chop. Enjoy!

Macaroni Salad

2 cups elbow macaroni noodles, cooked al dente, 1/2 cup Hellman’s mayonnaise, 1 shredded carrot and 1 teaspoon Good Season’s Italian Salad Dressing and Recipe Mix. Optional: 8 ripe olives (coarsely chopped).

Grilled Pork Chops and Peas

One bag frozen petite peas, prepared as directed on package.  Add 1 teaspoon of margarine or butter for flavor and a sprinkle of salt.These “marbles from Heaven” are easy and quick to prepare. Whether your child will eat 3 peas or 1/4 cup of them, they are good fixed this way.

We LOVE our Big Green Egg Grill!

We use a Big Green Egg Grill. It heats evenly and is built to last. We were sold on it when we went to a demonstration and could smell a pork butt cooking, a whole chicken and the large size had room for hot dogs too!  The Big Green Egg grill makes it easy to control the temperature by adjusting the vents on top. We were told that it will last so long you will have to distribute it via your will! I believe it because the ceramic body of it is built like a kiln. If you are looking for a good grill, I highly recommend a Big Green Egg.  For our family of 6, we got the large size. There have only been a very few times over the years that we had wished for the extra large sized grill. And these grilled pork chops are excellent on the Big Green Egg!
